Polvo Guisado

Na cozinha caboverdiana conhecemos uma variedade de receitas tradicionais antigas, mas também há muitos pratos modernos que fazem parte da nossa cozinha. Frequentemente influenciados pela gastronomia portuguesa, este guisado de polvo é um deles. Na verdade, é algo das últimas décadas, que não deve ser ignorado.
Em casa adoramos e comemos com baguete e salada, mas também fica óptimo com arroz.
Geralmente faço com polvo já preparado ao vapor e fatiado. Mas é claro que também pode cozinhar e cortar um polvo com antecedência.
Abaixo vou explicar o que precisa para esse delicioso guisado.
Ingredientes:
Para 6-8 pessoas
1 kg de polvo cozido no vapor fatiado (descongelado)
500 gramas de batata cerosa em cubos
1 cebola picada
1 pimentão vermelho em tiras
450 gramas de molho de tomate
100 ml de vinho branco seco (opcional)
6 dentes de alho prensados
Punhado de salsa picadinha
2 colheres de sopa de azeite
3 folhas de louro secas
Sal como desejar
1/2 colher de chá de flocos de pimenta (opcional)
Método de preparação:
Primeiro, pique todos os ingredientes e deixe-os prontos para uso.
Numa frigideira grande, aqueça o azeite. Junte a cebola picada, o alho amassado, as tiras de pimentão e o louro e frite tudo por alguns minutos em lume médio.
Adicione o polvo e um pouco de sal e frite por cerca de 5 minutos.
Tampe a panela e deixe ferver por mais 5 minutos. Em seguida, adicione o molho de tomate, o vinho branco e os flocos de pimenta. Mexa bem, com o lume brando sem tampa, para que o álcool do vinho evapore.
Adicione os cubos de batata e deixe ferver descoberto até que a batata esteja cozida e o guisado engrosse um pouco.
Por fim, adicione a salsa picada e retire as folhas de louro. Mexa bem e prove, verifique se o gosto está equilibrado. Ajuste um pouco mais, se necessário. Tampe a panela novamente e deixe o guisado repousar por cerca de 10 minutos.
Enquanto isso, corte a baguete e algumas rodelas de l limão. Prepare também a sua salada ou um pouco de arroz.

Octopus Stew

In the Cape Verdean cuisine we know a variety of old traditional recipes, but nowadays there are also a lot of modern dishes that belong just as much to our cuisine. Often influenced by Portuguese cuisine. This octopus stew is one of them. It is actually something from the last decades, but it can no longer be ignored.
At home we love it and we eat it with baguette and salad, but it is also great with rice.
I always use steamed and sliced octopus. But of course you can also just cook and cut an octopus yourself in advance.
Below I will show you what you need for this delicious stew.
Ingredients:
For 6-8 people
1 kg off steamed octopus sliced (thawed)
500 grams waxy potatoes in cubes
1 onion chopped
1 red bell pepper in strips
450 grams tomato sauce
100 ml white dry wine (optional)
6 cloves garlic pressed
Handful of finely chopped parsley
2 tablespoons olive oil
3 bay leaves dried
Salt as desired
1/2 teaspoon chili flakes (optional)
Preparation:
First, chop all the ingredients and get them ready for use.
Heat the olive oil in a large frying pan. Add the chopped onion, the crushed garlic, the bell pepper strips, and the bay leaves and fry everything for a few minutes over medium heat.
Add the octopus and some salt, stir-fry for about 5 minutes. Cover the pan and let it simmer for another 5 minutes.
Then add the tomato sauce, the white wine, and the chili flakes. Stir everything well and bring it to boil without a lid on a low heat so that the alcohol can evaporate from the wine.
Add the potato cubes and let it simmer uncovered until the potato is cooked and the stew thickens a bit.
Finally, add the chopped parsley and remove the bay leaves. Stir everything well and taste if the taste is in balance. Adjust some more if necessary.
Cover the pan again and let the stew rest for about 10 minutes.
Meanwhile, slice the baguette and some lemon wedges. Also prepare your salad or some rice.

Octopus Stoofje
Ingrediënten:
Voor 6-8 personen
1 kg voor gestoomde octopus gesneden (ontdooid)
500 gram vastkokende aardappels in blokjes
1 ui gesnipperd
1 rode paprika in reepjes
450 gram tomatensaus
100 ml witte droge wijn (optioneel)
6 teentjes knoflook geperst
Handjevol fijngesneden peterselie
2 eetlepels olijfolie
3 laurierblaadjes gedroogd
Zout naar wens
1/2 theelepel chili flakes (optioneel)
Bereidingswijze:
Snijd als eerste alle ingrediënten en zet deze klaar voor gebruik.
In een grote hapjespan verwarm je de olijfolie. Doe hier de gesnipperde ui, de geperste knoflook, de paprikareepjes, en de laurierblaadjes bij en fruit alles een paar minuten op medium hoog vuur.
Doe er de octopus bij en wat zout, roerbak ongeveer 5 minuten. Dek de pan af en laat nog 5 minuten pruttelen.
Voeg vervolgens de tomatensaus toe, de witte wijn, en de chiliflakes. Roer alles goed en breng zonder deksel op zacht vuur aan de kook zodat de alcohol van de wijn kan verdampen.
Voeg dan ook de aardappelblokjes toe en laat nog even onafgedekt pruttelen tot de aardappel gaar is en de stoof wat indikt.
Als laatste voeg je de fijngesneden peterselie toe en verwijder je de laurierblaadjes. Roer alles nog eens goed om en proef of de smaak in balans is. Stel eventueel nog wat bij.
Dek de pan weer af en laat het stoofje ongeveer een minuut of 10 rusten.
Snijd intussen de stokbrood en wat partjes citroen. Bereid ook je salade of wat rijst.
